GASTRONOMY - A good kitchen is the foundation of happiness!

From the time of the conquest there was also the implementation of culinary traditions. A large quantity and variety of Spanish and Arab food products began to arrive, such as starch, almond, brown sugar, oil, rice, capers, olives, saffron, garlic, basil, pennyroyal, anise, sesame, cloves, cinnamon, chickpeas, lentils, honey.

To the fusion of Spanish and indigenous cuisine is added the contribution of the black ethnic group from Africa, which incorporated culinary proposals and improved the regional cuisine. It is due to them that slices of ripe, roasted banana, banana in soups and sancochos, aguapanela and dulce de macho are served on the table, among others.

The Chocó is one of the richest regions in sea and river fish due to its abundant river resources. The coasts of this department, with the most beautiful coves and bays in Colombia, make possible the abundance of fish and seafood dishes that constitute the nutritional base of the population and are often accompanied by yam, yucca, cooked or fried banana and cheese. coastal. Similarly, breadfruit is frequently used in kitchens, with flour extracted from its seeds, they prepare egg arepas, fritters and jelly. The locals make the biche or cane alcohol distilled in a traditional way, to which aphrodisiac as well as medicinal effects are attributed, in such a way it has been used for years to cure various diseases, ranging from parasite control to snake bites.

Among the dishes are famous atollado rice, “arrecho” rice, coconut rice, cold cuts in tamale, piangua, churuleja, fried fish, horse mackerel stew, fish empanadas, various ceviches and zaino stew (bush pig). The desserts of rice with coconut milk, the masitas and the coconut panelitas with or without passion fruit.

SUSTAINABILITY - Let us always ensure that our actions leave a green mark on our path!

ARCHITECTURE
We try to reduce, in every way, the impact on the environment. Therefore, the design of the buildings that make up our hotel are characterized by high ceilings and few walls to create a cool environment without resorting to fans or air conditioners, but guaranteeing protection from the rain and wind.

RENEWABLE ENERGY

Likewise, our refrigerators, electrical connections and all lighting are powered by solar energy, causing zero emissions or noise pollution. It is clear that, when using these renewable sources, we have to minimize our energy demands, so we do not allow the use of utensils such as hair dryers and high-power electrical devices. However, there is no problem when charging your mobile phones, cameras or laptops.

WASTEWATER TREATMENT
We have several septic tanks with filtration systems, thus reducing odors and contamination. Therefore, we recommend our guests not to throw papers or sanitary towels into the toilet and to use the bins.

RECYCLING
Regarding waste, we make a meticulous selection of all the waste we generate, thus separating plastic, cans, glass, paper, cardboard and organic. We compost the latter together with paper and cardboard; With the glass we create coral reefs in the rocks in front of our beach and the rest of the waste we return to Nuquí.
