ITINERARY (Subject to change without notice):

Thursday - Depart USA: Depart USA on overnight flight

Friday - Arrive Santiago: Morning arrival. Meet and transfer to the Lastarria Boutique Hotel for three nights with buffet breakfast daily. Afternoon city tour of Santiago, fourth largest city in South America and beautifully set among a backdrop of snow-capped Andes. Visit main points of interest in the city as well as La Chascona Museum, the house that Nobel Prize Literature recipient Pablo Neruda built. Evening dinner at one of Santiago’s finest restaurants, Astrid y Gaston. (D)

Saturday – Santiago: Morning culinary experience with one of Chile’s renowned chefs. Begin with a visit to the Central Market to pick all the perfect ingredients, learn about produce and how to buy them. Continue on to the Chef’s workshop where you will begin preparations for lunch while learning about Chilean food and wine. Then it’s Bon Appetit! (B/L)

Sunday - Santiago: Enjoy a full day visit to the Santa Rita Vineyards. Located 40kms south of Santiago, at the foothills of the Andes, it is a perfect place to enjoy history with a visit to its Andean Museum, tour the winery and enjoy a wine tasting. Santa Rita has been given several awards at the international level confirming the excellence of its wines. Enjoy lunch at the popular Dona Paula Restaurant located right inside the vineyard. Return to your hotel in Santiago. (B/L)

Monday – Santiago-Colchagua Valley: Morning drive south via the Pan American Highway towards the wine valleys of Cachapoal and Colchagua. Visit and winetasting at the Altair Vineyard, a unique place, where through Altair’s patience and steadfast effort the secrets of its terroir, its flavors and spirit are slowly revealed vintage by vintage. Lunch at the winery. Continue on to the Colchagua Valley and check-in at the  Lapostolle Residence (Clos Apalta Winery) for a two night stay.  In the afternoon, on behalf of Alexandra Marnier Lapostolle, you will be hosted through the Clos Apalta Winery to see how their unique wine is made. Tuesday – Colchagua Valley: Begin today with a visit to the Montgras Winery where you will become an oenologist for the day, playing with flavors and scents of different varieties to create your own wine. Take part in the bottling, corking and labeling processes. Lunch today is at the Q Clay Restaurant next to the Bisquertt winery. Following lunch, it’s on to the Neyen Apalta winery where you will be welcomed by their host and guided through old vines dating back to the nineteenth century and then visit the winery and the cellar, built in 1890, constituting the oldest winery in Apalta. Wednesday – Colchagua Valley-Valparaiso: Head north through beautiful back roads towards Valparaiso. Stop en route at Isla Negra to visit one of Pablo Neruda’s three homes in Chile. A lover of all things maritime, Neruda built the home to resemble a ship. Also a passionate collector, every room has a different collection of bottles, ship figureheads, maps ships in bottles and an impressive array of shells in their own “Under the Sea” room. Then on to the Matetic vineyard, east of San Antonio. The Matetic family’s conviction in the vital importance of maintaining a strong professional team, ensures that Matetic wines achieve the highest quality. Lunch is served at the Equilibrio restaurant located right by the vineyard, followed by a tour of the vineyard with their sommelier. Continue to Valparaiso and check in at the Zero Hotel for a two night stay. (B/L)

Thursday - Valparaiso: This morning you’ll immerse yourself in a culinary experience in this World Heritage city, built on 45 hills. Explore the city while you shop for the best ingredients to later take back to the hotel where you will prepare a delicious meal based on typical Chilean ingredients accompanied by Chilean wine and a local Chef. The balance of the afternoon is at leisure to explore the city on your own. (B/L)

Friday – Valparaiso-Santiago-Puerto Montt-Cliffs Preserve: Morning drive to Santiago and the airport for your flight to Puerto Montt. Meeting by Cliffs Preserve staff and transfer to their unique and exquisitely isolated location, a gorgeous setting on a private preserve. Your four night stay at The Cliffs Preserve, an eco-luxury retreat, will include guided activities such as hiking, bird watching, horseback riding, water sports, penguins, sea lions and whale watching, cultural tours, one day local sport fishing and one Wellness & Spa treatment. Also enjoy organic and culinary tours by Cliffs Preserve including visits to their green house and demonstrations on how local farmers work the fertile grounds. (B/D)
